What makes you happy today?

One day off, sitting in the midday summerly sun on my Patio.....

^ Wonderful patio! All you need on this beautiful day is an ice cold beer. ;)

Got fired from my old job waiting tables today. Told a nagging customer he was spoiled (he didn't pay for the meal, it was given to him and yet, anytime I was near him he felt the need to fuss at me for doing things wrong). It was a job I really dreaded going into and I just started a new job a few days ago. Went back home, got some cleanup and laundry done, smoked a bowl then bbq'd chicken breasts, hamburgers and hot dogs over charcoal for tonight's family dinner.

On that note, I need to start doing seafood on a regular basis. I'm training to be a fishmonger so I need to get familiar with different types of fish and what works best for cooking them.

Pretty much for any food land or sea, however, seasoned a little and coated in a good sauce (it's to keep the stuff moist while suspended over coals) is enough for pretty much anything to come out good and you were outside and thus didn't messy your kitchen in the process.

Addendum: As far as I can tell, lemon and cilantro in liberal quantity is the perfect way to go with any fish.

Some fish is so fecking gorgeous that it needs no extra flavouring, sea bass for example.... try baking in a parcel with the fish just sitting on a few slices of tomato which helps to keep the moisture levels up

An alternative is to add some other veg/salad items e.g onions, sliced peppers and mushrooms or whatever you fancy ..... this way your chosen side dish cooks at the same time as the fish :):thumbs up:

Hello Slimjim - what I can read here, you must be a highly gifted chef. May I come over to you for a weekend meal? p:p

I'm not a great cook which is why I like this kind of recipe - as all you do is put everything in the parcel, seal it and stick it in the oven - relatively foolproof whereas getting a steak cooked to absolute perfection can be tricky.

It makes me happy that I'm getting off work earlier and don't have to get up early tomorrow. :)

Having the day off and the fact that I'm starting my new job tomorrow.
